PRE-HISTORIC BEER

THERE’S A NEW BEER coming out and it’s one a T-Rex could have lapped up in its day. In the vein of Jurassic Park, this unique beer will have been brewed with yeast extracted from a 45-million-year-old leaf that has been frozen within a piece of solid amber. The yeast was actually extracted by a retired molecular biologist in the ’9Os, but since then he and friends have started their own microbrewery – Fossil Fuels Brewing Company – and teamed up with fellow microbrewery Schubros to make their new (old) Saison beer. The first batches weren’t very good because, it was feared, the yeast was too old. Ian Schuster, the founder of Schubros Brewery, explained the yeast was somewhat high maintenance and needed “to be roused”. But after experimentation they found the perfect balance thanks to the help of a Crowdfunder campaign to help them make the “world’s oldest beer”. They are hoping to cultivate a 25-million-year old strain, which they have deemed a “mere youngster”.
