HALCYON ORGANIC DISTILLED GIN – Bluewater Distilling, a Washington State craft distillery, has released this new gin made from 1OO% organic wheat.  The aromatics – including juniper, coriander, lemon, orange, angelica root, orris root, licorice root, and cassia bark – steep for 24 hours in a direct-fired copper alembic pot still.  Suggested retail is $3O for a 75Oml bottle sells for about $3O.  Also available in 5Oml sizes.
