PISCO PORTON
Made from a blend of three grape varietals – Quebranta, Torontel and Albilla – this mosto verde pisco will be available in July.  A juice from the first pressing of these grapes is made and then fermented, but not completely in order to retain some of the natural grape sugars that would otherwise be converted to alcohol.  The partially fermented juice (must) is then distilled to 86 proof in copper pot stills and is left to rest for five to eight months before bottling to let the flavors develop.  Pisco Porton’s aroma is floral and fruity with hints of grassy herbs and white pepper.  Flavors are sweet and rich spicy with notes of cinnamon, orange blossom and citrus.  Suggested retail is $4O to $5O per 75Oml.  Available soon.
