VERMONT SPIRITS LIMITED RELEASE VODKA

This Limited Release Vodka is produced entirely from the early run sap of maple trees.  Each spring in New England, freezing nights and warm sunny days allow the mature maple trees to pump the converted starch they have been storing during the winter season into sugar.  The trees release this sugar as sap which flows for less than six weeks a year.  Once collected, the maple sap is concentrated in a maple arch, fermented and then distilled in small batches.  A mature tree will produce about 4O quarts of sap in a season and it takes the sap from an entire tree to produce a single bottle of vodka.  As the annual “sugaring” season begins, the first few flows of sap released are referred to as “early run sap”.  Early run sap is light in color with a very delicate and subtle flavor.  This year, fewer than 1OOO hand-numbered 375ml bottles were produced.  Suggested retail is $45.  Available from Sun Wholesale Fine Wines & Spirits and Consolidated Beverages.
